1½ lbs boneless chicken thighs or breasts, cut into chunks
1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
¾ cup flour
½ cup cornstarch
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
1 tsp salt
½ tsp black pepper
Vegetable oil for frying
For the Sauce:
½ cup mayonnaise
¼ cup sweet chili sauce
1–2 tsp sriracha
1 tsp honey (optional)
Marinate chicken in buttermilk for at least 15 minutes.
Mix flour, cornstarch, and spices in a bowl.
Whisk sauce ingredients together until smooth; set aside.
Heat oil to 350°F. Dredge chicken in flour mixture.
Fry in batches until golden and cooked through, about 5–6 minutes.
Drain and toss in Bang Bang sauce. Serve immediately.
