  • 1 cup mushrooms, sliced

  • 1 small onion, sliced

  • 1 bell pepper, sliced (optional)

  • 2 garlic cloves, minced

  • 1-inch ginger, minced

  • 1 tbsp light soy sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp oyster sauce

  • 1/2 tsp sugar

  • 1 tsp coarse ground black pepper

  • 2 tbsp water

  • 1 tsp soy sauce (for marinade)

  • 1 tsp cornstarch (for marinade)

  • 1/2 tsp sesame oil (optional)

  • 2 tbsp vegetable oil (divided)

Instructions

  1. Mix sliced chicken with soy sauce, cornstarch, black pepper, and sesame oil. Let marinate 10–15 minutes.

  2. Combine sauce ingredients in a small bowl.

  3. Heat 1 tbsp oil in a wok. Stir-fry chicken until golden and cooked through. Remove.

  4. Add remaining oil, then sauté garlic and ginger until fragrant.

  5. Add mushrooms, onion, and bell pepper. Stir-fry 3–4 minutes.

  6. Return chicken to pan, pour in sauce, and cook 1–2 minutes until thickened.

  7. Serve hot with rice or noodles.
