  • 4 tbsp butter

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • ¼ cup all-purpose flour

  • 2 cups whole milk

  • 1 cup heavy cream

  • 3 cups chicken or vegetable broth

  • 3 cups broccoli florets, chopped

  • 1 cup shredded carrots

  • 2 cups freshly grated sharp cheddar cheese

  • Salt and pepper to taste

  • Pinch of nutmeg (optional)

Instructions

  • In a large pot, melt butter. Sauté onion and garlic until soft.

  • Stir in flour and cook for 1–2 minutes.

  • Slowly whisk in milk, cream, and broth. Bring to simmer.

  • Add broccoli and carrots. Simmer 15–20 minutes until tender.

  • Optional: Partially blend for creamier texture.

  • Lower heat, stir in cheese. Mix until melted and smooth.

  • Season to taste and serve hot.
