A hearty, cheesy one-pan casserole made with ground beef, thinly sliced potatoes, and a creamy sauce—baked until bubbly and golden. Perfect for cozy dinners and make-ahead meals.
1 lb ground beef (85–90% lean)
1 small onion, diced
2 garlic cloves, minced
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk
1/2 cup beef broth
1/2 cup sour cream or heavy cream
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
3 cups thinly sliced potatoes (Yukon Gold or Russet)
2 cups shredded cheddar and/or mozzarella cheese
Optional: paprika, parsley
Preheat oven to 375°F. Grease a 9×13-inch casserole dish.
In a skillet, cook ground beef with onion and garlic until browned. Season and drain.
In same skillet, melt butter. Whisk in flour and cook 1 min.
Gradually add milk, broth, sour cream. Stir until thickened. Season to taste.
Layer 1/3 of potatoes, half the beef, sauce, and cheese. Repeat. Top with remaining potatoes, sauce, and cheese.
Cover with foil. Bake 45 min. Uncover and bake 20–25 min more until potatoes are tender and cheese is golden.
Let rest 10 minutes before serving.
Slice potatoes thin for even baking.
Use a mandoline for perfect slices.
