This Cheesy Hamburger Rice Casserole is a comforting, creamy bake filled with seasoned ground beef, fluffy rice, and melty cheddar cheese—perfect for weeknights or leftovers.
1 lb ground beef
1 cup uncooked white rice (or 2 ½ cups cooked)
1 small yellow onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
¾ cup milk
2 cups shredded cheddar cheese, divided
½ tsp paprika (optional)
1 tbsp Worcestershire sauce (optional)
Salt and pepper to taste
Optional: 1 cup frozen peas or corn
Preheat oven to 350°F. Grease a 9×13-inch casserole dish.
In a skillet, cook ground beef until browned. Drain grease.
Add diced onion and garlic. Sauté until soft. Season with salt, pepper, paprika, and Worcestershire.
In a bowl, combine cooked rice, soup, milk, 1 ½ cups cheese, and beef mixture.
Pour into casserole dish. Top with remaining cheese.
Cover with foil and bake for 25 minutes.
Remove foil and bake 10–15 minutes more until cheese is melted and bubbly.
Let rest for 5–10 minutes before serving.
