A hearty, cheesy comfort dish featuring creamy ranch-seasoned potatoes, smoky sausage, and melted cheddar — baked until bubbly and golden.

Ingredients

  • 2 lbs Yukon Gold or red potatoes, cubed

  • 1 lb smoked sausage, sliced

  • 1 packet ranch seasoning mix

  • 1 cup sour cream

  • 1 can (10.5 oz) cream of chicken soup

  • 1½ cups shredded cheddar cheese (divided)

  • 2 tbsp olive oil

  • 2 tbsp butter (optional)

  • Salt and pepper to taste

  • 2 tbsp chopped green onions or parsley for garnish

Instructions

  1. Preheat oven to 400°F and grease a 9×13-inch baking dish.

  2. Toss potatoes with olive oil and ranch seasoning. Add sausage and stir.

  3. Mix sour cream, soup, and 1 cup cheese. Combine with potato mixture.

  4. Spread evenly in dish. Top with remaining cheese.

  5. Cover with foil and bake 40 minutes. Remove foil and bake 10–15 more minutes until golden.

  6. Garnish with green onions or parsley and serve hot.

Notes

  • Add broccoli, corn, or bell peppers for variety.

  • For extra creaminess, stir in 4 oz cream cheese before baking.
