A flavorful and juicy chicken meatloaf packed with garlic, Parmesan, and Italian herbs. A healthier twist on a classic, perfect for weeknight dinners or meal prep.
1.5 lbs ground chicken
1 small onion, diced
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 cup Italian-style breadcrumbs
1 large egg
1/4 cup milk
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for sautéing)
Preheat oven to 375°F. Lightly grease a loaf pan or line a baking sheet with parchment.
Sauté onion and garlic in olive oil until soft. Let cool slightly.
In a large bowl, combine ground chicken, Parmesan, breadcrumbs, egg, milk, seasoning, salt, pepper, and sautéed onions/garlic.
Mix until combined, shape into a loaf, and transfer to pan.
Bake 45–55 minutes, or until internal temp reaches 165°F.
Optional: Brush with garlic-Parmesan glaze and broil for 2–3 minutes.
Rest 10 minutes before slicing and serving.
