A festive, flavorful cheese ball made with goat cheese, cream cheese, cranberries, and toasted pecans — perfect for holiday entertaining.
8 oz goat cheese, softened
4 oz cream cheese, softened
½ cup chopped toasted pecans
⅓ cup chopped dried cranberries
1 tsp fresh thyme or rosemary, minced
1 tsp honey (optional)
Salt & black pepper to taste
Coating:
½ cup chopped toasted pecans
¼ cup chopped dried cranberries
2 tbsp chopped parsley
In a bowl, mix goat cheese, cream cheese, cranberries, pecans, herbs, honey, salt, and pepper until smooth.
Form into a ball using plastic wrap. Chill for 1–2 hours.
Combine coating ingredients on a plate. Roll chilled cheese ball to coat completely.
Let sit at room temperature for 15 minutes before serving with crackers or fruit.
