Tender beef stir-fried with crisp broccoli in a savory garlic-ginger sauce. A quick and easy weeknight dinner that’s better than takeout!
1 lb flank steak or sirloin, thinly sliced
3–4 cups broccoli florets
3 garlic cloves, minced
1 tsp fresh grated ginger
1 tbsp soy sauce (for marinade)
1 tsp sesame oil (for marinade)
1 tsp cornstarch (for marinade)
Sauce:
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
1/2 cup beef broth or water
2 tsp cornstarch
1 tsp sesame oil
Slice beef thinly and marinate with soy sauce, cornstarch, and sesame oil for 15 minutes.
Blanch broccoli for 2 minutes, then shock in cold water. Drain.
Mix sauce ingredients in a bowl.
Heat oil in a pan. Sear beef in batches until browned. Set aside.
Add garlic and ginger to pan. Sauté 30 seconds.
Add broccoli and stir-fry 1–2 minutes.
Return beef to pan. Pour in sauce and stir until thickened, 2–3 minutes.
Serve hot over rice or noodles.
Use a very hot pan for best sear.
Slice beef against the grain.
Blanching broccoli keeps it vibrant and crisp.
Store leftovers up to 4 days in the fridge.
