Brownie Layer:
1/2 cup melted butter
1 cup granulated sugar
2 eggs
1/3 cup unsweetened cocoa powder
1/2 tsp espresso powder (optional)
1/2 tsp vanilla extract
1/2 cup all-purpose flour
Coffee Syrup:
1/4 cup strong brewed coffee
1 tbsp sugar
1 tbsp coffee liqueur (optional)
Mascarpone Cream:
8 oz mascarpone cheese
1/2 cup powdered sugar
1/2 tsp vanilla extract
1/2 cup heavy cream, whipped to soft peaks
Finish:
Unsweetened cocoa powder, for dusting
Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment.
Make brownie batter: mix butter and sugar, then eggs, then dry ingredients. Pour into pan and bake 20–25 minutes. Cool completely.
Simmer coffee syrup ingredients until reduced. Brush over cooled brownies.
Beat mascarpone with powdered sugar and vanilla. Fold in whipped cream.
Spread mascarpone mixture over brownies. Dust with cocoa powder.
Chill for 2+ hours before slicing and serving.
