1 (9×9) pan of brownies (homemade or boxed)
½ cup strong brewed espresso or coffee
8 oz mascarpone cheese, softened
1 cup heavy cream
½ cup powdered sugar
1 tsp vanilla extract
Unsweetened cocoa powder (for dusting)
Bake brownies in a 9×9-inch pan. Cool completely.
Poke holes in cooled brownies. Slowly brush espresso over the top. Chill 15 mins.
Beat heavy cream to soft peaks. In another bowl, mix mascarpone, powdered sugar, and vanilla.
Fold whipped cream into mascarpone until smooth.
