  • 1 packet taco seasoning (or homemade)

  • ¼ cup water

  • 2 cups cooked rice (white, brown, or cauliflower)

  • 1 can black beans, drained and rinsed

  • 1 cup corn (frozen, canned, or fresh)

  • 1 cup shredded lettuce

  • 1 cup diced tomatoes or salsa

  • 1 avocado, sliced

  • 1 cup shredded cheddar or Mexican blend cheese

  • Sour cream or Greek yogurt (for topping)

  • Lime wedges, cilantro, hot sauce (optional)

Instructions

  • Cook rice and set aside.

  • In a skillet, brown ground beef over medium heat. Drain if needed.

  • Stir in taco seasoning and water. Simmer for 5 minutes.
