1 lb ground beef (85–90% lean)
1 packet taco seasoning (or homemade)
¼ cup water
2 cups cooked rice (white, brown, or cauliflower)
1 can black beans, drained and rinsed
1 cup corn (frozen, canned, or fresh)
1 cup shredded lettuce
1 cup diced tomatoes or salsa
1 avocado, sliced
1 cup shredded cheddar or Mexican blend cheese
Sour cream or Greek yogurt (for topping)
Lime wedges, cilantro, hot sauce (optional)
Cook rice and set aside.
In a skillet, brown ground beef over medium heat. Drain if needed.
