A warm and hearty German Potato Soup made with creamy potatoes, savory smoked sausage, and traditional herbs. Perfect for cozy nights or meal prep.
2 tbsp butter or oil
1 medium onion, diced
2 garlic cloves, minced
1 leek (white part only), sliced (optional)
2 carrots, sliced
2 celery stalks, chopped
2 lbs potatoes, peeled and diced
6 cups chicken or vegetable broth
1 bay leaf
1 tsp dried marjoram
Salt and pepper to taste
6 oz smoked sausage, sliced
1/2 cup heavy cream or crème fraîche (optional)
Fresh parsley, chopped (for garnish
In a large pot, heat butter or oil. Add onions, garlic, and leeks; sauté until softened.
Add carrots and celery; cook 3–4 minutes.
Stir in potatoes and cover with broth.
Add bay leaf, marjoram, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
Mash some potatoes for a thicker texture.
Brown sausage in a skillet and stir into soup. Simmer 10 more minutes.
Stir in cream if using. Adjust seasoning.
Garnish with parsley and serve warm.
