A warm and hearty German Potato Soup made with creamy potatoes, savory smoked sausage, and traditional herbs. Perfect for cozy nights or meal prep.

Ingredients

  • 2 tbsp butter or oil

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 leek (white part only), sliced (optional)

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 lbs potatoes, peeled and diced

  • 6 cups chicken or vegetable broth

  • 1 bay leaf

  • 1 tsp dried marjoram

  • Salt and pepper to taste

  • 6 oz smoked sausage, sliced

  • 1/2 cup heavy cream or crème fraîche (optional)

  • Fresh parsley, chopped (for garnish

Instructions

  • In a large pot, heat butter or oil. Add onions, garlic, and leeks; sauté until softened.

  • Add carrots and celery; cook 3–4 minutes.

  • Stir in potatoes and cover with broth.

  • Add bay leaf, marjoram, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25–30 minutes.

  • Mash some potatoes for a thicker texture.

  • Brown sausage in a skillet and stir into soup. Simmer 10 more minutes.

  • Stir in cream if using. Adjust seasoning.

  • Garnish with parsley and serve warm.
