This Spicy Southern Chicken Spaghetti Casserole is a bold and creamy comfort food classic made with tender chicken, spicy Rotel tomatoes, cheese, and Cajun seasoning. Perfect for family dinners or potlucks.

  • 12 oz spaghetti, cooked and drained

  • 3 cups cooked, shredded chicken

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 1 can Rotel (diced tomatoes with green chiles), drained

  • 1 can cream of chicken soup

  • 1 can cream of mushroom soup

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese

  • 1 cup shredded pepper jack cheese

  • 1 tsp Cajun or Creole seasoning

  • Optional: jalapeños, hot sauce, chopped parsley for garnish

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.

  • Sauté onion and bell pepper until soft. Add jalapeño if using.

  • In a large bowl, mix soups, sour cream, Rotel, cheese, seasoning, cooked chicken, and veggies.

  • Add cooked spaghetti and mix well.

  • Pour into baking dish. Top with more cheese.

  • Cover and bake 25 minutes. Uncover and bake 10–15 minutes more, until bubbly and golden.

  • Rest before serving. Garnish as desired.
