This Spicy Southern Chicken Spaghetti Casserole is a bold and creamy comfort food classic made with tender chicken, spicy Rotel tomatoes, cheese, and Cajun seasoning. Perfect for family dinners or potlucks.
12 oz spaghetti, cooked and drained
3 cups cooked, shredded chicken
1 onion, chopped
1 bell pepper, chopped
1 can Rotel (diced tomatoes with green chiles), drained
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded pepper jack cheese
1 tsp Cajun or Creole seasoning
Optional: jalapeños, hot sauce, chopped parsley for garnish
Preheat oven to 350°F. Grease a 9×13-inch baking dish.
Sauté onion and bell pepper until soft. Add jalapeño if using.
In a large bowl, mix soups, sour cream, Rotel, cheese, seasoning, cooked chicken, and veggies.
Add cooked spaghetti and mix well.
Pour into baking dish. Top with more cheese.
Cover and bake 25 minutes. Uncover and bake 10–15 minutes more, until bubbly and golden.
Rest before serving. Garnish as desired.
