These kid-friendly ground chicken meatballs are tender, flavorful, and packed with hidden veggies. Perfect for lunchboxes, dinner, or meal prep.
1 lb ground chicken
½ cup breadcrumbs
1 egg
¼ cup grated zucchini (squeezed dry)
¼ cup grated carrot
¼ cup grated Parmesan
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Olive oil for baking or frying
Preheat oven to 400°F.
Mix all ingredients in a large bowl until just combined.
Form into 1½-inch balls and place on greased baking sheet.
Brush or spray with olive oil.
Bake for 15–18 minutes, turning halfway.
Serve warm with dipping sauce or over pasta/rice.
