These kid-friendly ground chicken meatballs are tender, flavorful, and packed with hidden veggies. Perfect for lunchboxes, dinner, or meal prep.

Ingredients

  • 1 lb ground chicken

  • ½ cup breadcrumbs

  • 1 egg

  • ¼ cup grated zucchini (squeezed dry)

  • ¼ cup grated carrot

  • ¼ cup grated Parmesan

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper to taste

  • Olive oil for baking or frying

Instructions

  • Preheat oven to 400°F.

  • Mix all ingredients in a large bowl until just combined.

  • Form into 1½-inch balls and place on greased baking sheet.

  • Brush or spray with olive oil.

  • Bake for 15–18 minutes, turning halfway.

  • Serve warm with dipping sauce or over pasta/rice.
