1½–2 lbs chicken thighs or breasts
¼ cup olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tsp dried oregano
1 tsp cumin
1 tsp paprika
½ tsp ground coriander
1 tsp salt
½ tsp black pepper
(Optional) ¼ cup Greek yogurt
For Tzatziki:
1 cup Greek yogurt
½ cup cucumber, grated and drained
1 clove garlic, grated
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped fresh dill or mint
Salt and pepper to taste
For Serving:
4–6 pitas or flatbreads
Sliced tomatoes
Sliced cucumber
Red onion, thinly sliced
Baby spinach or lettuce
Crumbled feta cheese (optional)
Marinate chicken with olive oil, lemon, garlic, spices, and yogurt (if using). Chill 30 min–24 hrs.
Make tzatziki: combine all ingredients and chill.
Cook chicken on grill or skillet until cooked through and charred. Let rest, then slice.
Warm pitas and assemble with tzatziki, chicken, and toppings.
