Tender marinated chicken, crisp veggies, and creamy tzatziki wrapped in warm pita — a quick, healthy Mediterranean meal ready in 30 minutes.

Ingredients

  • 2 lbs chicken thighs or breasts

  • ¼ cup olive oil

  • Juice of 1 lemon

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp ground coriander

  • 1 tsp salt

  • ½ tsp black pepper

  • (Optional) ¼ cup Greek yogurt

For Tzatziki:

  • 1 cup Greek yogurt

  • ½ cup cucumber, grated and drained

  • 1 clove garlic, grated

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp chopped fresh dill or mint

  • Salt and pepper to taste

For Serving:

  • 46 pitas or flatbreads

  • Sliced tomatoes

  • Sliced cucumber

  • Red onion, thinly sliced

  • Baby spinach or lettuce

  • Crumbled feta cheese (optional)

Instructions

  • Marinate chicken with olive oil, lemon, garlic, spices, and yogurt (if using). Chill 30 min–24 hrs.

  • Make tzatziki: combine all ingredients and chill.

  • Cook chicken on grill or skillet until cooked through and charred. Let rest, then slice.

  • Warm pitas and assemble with tzatziki, chicken, and toppings.

  • Wrap and serve immediately
