3 ripe bananas, mashed
1/2 cup (1 stick) unsalted butter, softened
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup mini chocolate chips (plus extra for topping)
Preheat oven to 350°F (175°C). Grease or line mini loaf pans.
In a medium bowl, mash bananas until mostly smooth.
In a large bowl, cream butter and brown sugar until fluffy.
Beat in eggs one at a time, then stir in vanilla.
