1 lb boneless, skinless chicken breast or thighs, diced
3 cups cooked rice (brown or white)
½ cup honey BBQ sauce
1 bell pepper, chopped
½ onion, diced
2 cloves garlic, minced
1 tbsp olive oil
Salt and pepper, to taste
Fresh parsley or scallions, for garnish
Heat olive oil in a large skillet. Add chicken, season, and sauté until golden and cooked through.
Add chopped pepper, onion, and garlic. Sauté until soft and fragrant.
