  • 23 medium sweet potatoes

  • 23 tablespoons olive oil

  • Salt and pepper to taste

  • ½ cup crumbled feta cheese

  • 23 tablespoons honey

  • Optional: Fresh parsley or thyme for garnish

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.

  • Slice sweet potatoes into ½-inch thick rounds.

  • Toss with olive oil, salt, and pepper. Arrange in a single layer on baking sheet.

  • Roast for 20 minutes, flip, and roast an additional 15–20 minutes until golden and tender.

  • Remove from oven. While warm, top with crumbled feta and drizzle with honey.

  • Garnish with herbs if desired. Serve warm or at room temperature.
