2–3 medium sweet potatoes
2–3 tablespoons olive oil
Salt and pepper to taste
½ cup crumbled feta cheese
2–3 tablespoons honey
Optional: Fresh parsley or thyme for garnish
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Slice sweet potatoes into ½-inch thick rounds.
Toss with olive oil, salt, and pepper. Arrange in a single layer on baking sheet.
Roast for 20 minutes, flip, and roast an additional 15–20 minutes until golden and tender.
Remove from oven. While warm, top with crumbled feta and drizzle with honey.
Garnish with herbs if desired. Serve warm or at room temperature.
