1.5 lbs boneless chicken thighs or breasts, cubed
1 cup plain yogurt (preferably full-fat)
2 tbsp lemon juice
1 tbsp ginger paste
1 tbsp garlic paste
1 tsp garam masala
1 tsp cumin
1 tsp coriander
1 tsp turmeric
1 tsp Kashmiri chili powder (or mix paprika + chili)
1 tsp salt
1 tbsp oil (mustard or neutral)
Optional: red food coloring
In a bowl, whisk together all marinade ingredients until smooth.
Add chicken cubes and coat thoroughly. Cover and marinate for at least 4 hours or overnight.
Thread chicken onto soaked wooden skewers or metal ones.
